New Year's Day Sweet Bread

Archontikon Tsoureki 3.000 gr Sweet bread ingredients
Water (cool) 900 gr Sweet bread ingredients
Butter 450 gr Sweet bread ingredients
Yeast 350 gr Sweet bread ingredients
Granulated sugar (optional) 30 - 50 gr Sweet bread ingredients
Cake type flour 200 gr Sweet bread ingredients
White spirits (ouzo, rum, raki etc) 200 gr Extra ingredients
Ovex Powder-ZK (egg wash replacer) Extra ingredients

Preparation

    Mix all the base ingredients (apart from the butter) at low speed for 3 minutes. Continue by adding the butter and mix at high speed for 8-10 minutes until you get a well developed, stretchy dough (dough temperature: 33-34oC)

    Allow the dough to rest for 20 minutes onto the working surface, once you have covered it with a plastic sheet.

    Cut the dough into 650 gr portions for 26 cm molds. Round up and allow to rest for 20 minutes on the working surface, once you have covered it with a plastic sheet.

    Stretch the dough with a rolling pin or via the use of a puff pastry machine (mold size dough stretching).

    Proof (±35oC/75 R.H.) for 60 minutes.

    Coat with Ovex Powder-ZK (egg wash replacer) or with egg wash. Slightly poke the surface with a fork and write your wishes onto the surface.

    Bake at 160-170oC without steam for 35-40 minutes. Make sure to keep the damper open.

Lettering:

Use the wire whisk to mix all the lettering ingredients together until you get a porridge like texture.

Use a pipping bag to write festive wishes on the surface.
