Ingredients Kg %
Prokorn 3 kg
ZEDO MXI 3000 60 gr
Fresh Yeast 90 gr
Water 1.800 gr
Prokorn Decor decoration ingredients

Preparation

    Mix all the ingredients together until you get a well developed, stretchy dough (dough temperature: 28°C)

    Allow the dough to rest for 10 minutes.

    Cut the dough into 115 gr portions.

    Round up the cut dough and allow it to rest (once covered) for 10 minutes.

    Mould into rings and decorate with Prokorn Decor.

    Proof for 35-40 minutes.

    Score the loaves 3 times.

    Bake at 230˚C (with steam) for 15 minutes.
